The day after

Not a bad day.

I continued the exercise trend (oddly, I have more time to exercise when school isn’t in session). Claire and Derek joined me for a pilates class. I miss going. That class rocks. It felt so good.

Kjrsten joined us too. We had a quick breakfast at Fresh Flours. I tried pumpkin, white chocolate, pecan muffin. Not bad.

Wayne was walking out with the girls to the zoo. I walked in at the right time and joined them. We wandered to the jaguar, tropical area, flamingos, zoomazium, ending with carousel and penguins.

That’s our usual pattern. At some point, I will get to another part of the zoo. The girls had fun. It was a good way to celebrate our partial dry break. New storm tomorrow!

We topped off the day with the Muppets movie. It seems like everyone is seeing this movie. It was funny. Mostly, it played the nostalgia card very well. The girls had a blast watching manamana on YouTube and then seeing it in the movie. They got a kick out of the guy calling the pink ladies with manamana.

I put T day leftover into this panini. It was a grade B. It did use my fig/raisin chutney well.

Leftover Turkey and Swiss Panini

Prep Time 5 Minutes
Cook Time 5 Minutes Servings 4 Difficulty Easy
Ingredients

1-½ cup Leftover Turkey, Shredded
½ cups Leftover Cranberry Sauce
¼ cups Chopped Pecans
2 Tablespoons Fig Or Apricot Jam
4 Tablespoons Dijon Mustard
8 slices (thick) Swiss Cheese
8 slices Sourdough Or Other Bread
8 Tablespoons Butter

Preparation Instructions

Spread all bread slices on one side with fig spread and Dijon. Top four slices with turkey.

Mix together cranberry sauce and pecans and spread over the turkey.

Top with slices of Swiss cheese.

Top with other four slices of bread with the jam/Dijon side down.

Spread both sides generously with softened butter and toast in the panini press (or in a heavy skillet, pressing with a spatula as they cook.)

Slice in half and serve.

Baths tonight. I had a nice moment brushing Laura’s hair slowly and reading her The Cranberry Thanksgiving. It was an old looking book that Laura protested reading. Now that she’s read the engaging story, she’s asked for it two nights in a row.
