Fish, not on Friday

Tuesday, I grabbed the day and got some salmon from our local fish store. Today was grocery day and cooking day. Before I began a busy day of running, I grabbed my newest edition of Cooking Light because I had no idea what to make next week. I flipped through it while sitting on one of the chairs in Fred Meyer after dropping off Laura to watch her favorite movie Bolt. I stumbled on this recipe for artic char. I thought it would serve nicely for my salmon. It even looks like salmon in the recipe. It was an evening of chopping galore. It was good as it made me bond with my veggies. Zucchini, fennel, parsley, red peppers, red onion all fell into my salad. The fennel made for a crisp addition to the salad without too much licorice taste.

I’m trying to embrace veggies and seafood more. It’s taking quite a bit of practice, but tonight was a nice glimmer. The salmon was lovely. The citrus relish did make it pop. Overall, a successful night of cooking which makes me happy.
