It was a J&C weekend. We celebrated Lucy’s birthday yesterday and had Easter dinner with them today. A lot of the weekend was dedicated to cooking. Since J&C share our love of food, it’s a natural event. It think of them as our holiday buddies. The feast was really about Wayne and his Easter gift to us. He really made the meal with a little help from me. Hams are his thing. He chose the following menu from cooking light: carrot soup with mint and greek yogurt garnish, rosemary and sweet vermouth glazed ham, grilled asparagus in a mixed green salad with gorgonzola vinaigrette, roasted potatoes & artichokes, hand-made thyme and parmesan rolls. I helped with shopping, chopping, and kid wrangling. He did the standing till 10pm Sat night and cut a Sunday nap short to get the work done. It was fun to have a cooking weekend and spend time together in the kitchen. We often shortcut that in our busy lives.
The real fun was in the eating. My favorite was the salad. It had white and green asparagus Wayne grilled separately. The vinaigrette was seamless and meshed the salad together so well. The carrot soup was lovely (and I’m not a carrot soup person). The roasted veggies were fun, especially the blue potatoes. It was so good, it forced me to tolerate the artichokes. I could have eaten the rolls all day long. They were swirled and had a lovely crunch from the whole wheat. The ham was sweet and moist. I’ll be eating it thankfully for the rest of the week. J&C brought over delicious wine and brownies. We had the brownies with whip cream and strawberries.
The girls were the most fun. Ruth and Grace had a blast playing with the girls. We had their first Easter egg hunt.
My girls enjoyed their Easter baskets. Sara hugged the new Girls Bible I got her. We feasted on Dr. Seuss’ 1 Fish. Laura loved looked at her Fancy Nancy sticker book even though it was about Valentine’s. The hit was the Lindt carrot chocolate candies shaped like umbrellas.
